Most people call this bubbly wine, Champagne. Well don’t let the French catch you doing that! All Champagnes are bubbly wines but not all bubbly wines are Champagnes. The rest of them come from Spain, Italy, and the old U.S.A. They are called Cavas, Proseccos, Methode Traditionnelle and “sparkling wine.” They range from bone dry to sickly sweet.
